Resistant Starch

Is resistant starch good for you? Resistant starch is starch that is not digested. Unlike regular starch, which when digested breaks down into sugar, resistant starch moves past the stomach and into the colon. Once in the colon the resistant starch is eaten by your good bacteria which in turn produce butyrate. Butyrate is a short-chain fatty acid that strengthens your brain and your gut. Grass fed butter is high is butyrate which is why we use it exclusively. Since resistant starch is not digested like other starches, it doesn’t raise insulin levels causing high blood sugar problems. Resistant starch can kill precancerous cells in the gut and shrink cancerous lesions in the bowel. Some examples of resistant starch are cassava flour, potato starch, white rice, green bananas, and plantains (the greener the better!). @sietefoods
